Wholesome Weekend Pancakes

A simple, nourishing pancake recipe that’s become a weekend ritual in our home. Soft, naturally sweet and packed with goodness, these are perfect for slow mornings, sharing with family, and starting the day feeling energised and satisfied.
Ingredients (serves 2–3):
• 120g jumbo oats (blended into flour)
• 150g Greek yoghurt
• 1 tbsp ground flaxseed
• 1 tbsp hemp seeds
• 1 tsp baking powder
• ½ tsp cinnamon
• 2 eggs
• 1 tbsp maple syrup
• Splash of milk (to loosen)
• Ghee or butter, for cooking
To serve:
Greek yoghurt, maple syrup, blueberries (or your favourite toppings)
Method:
1. Add the jumbo oats and hemp seeds to a blender and blend until you have a fine flour.
2. In a bowl, combine the oat & hemp lour, Greek yoghurt, flaxseed, baking powder and cinnamon.
3. Add the eggs and maple syrup, then stir well. Add a splash of milk until you reach a thick but spoonable consistency.
4. Heat a little ghee or butter in a pan over medium heat.
5. Spoon the batter into small pancakes and cook for 2–3 minutes, until bubbles form on the surface. Flip and cook until golden.
6. Serve stacked with Greek yoghurt, maple syrup and fresh berries.
