Wholesome Banana Bread

This simple, feel-good banana bread is one of my absolute favourites — made with ripe bananas, nourishing spelt or buckwheat flour, and a hint of honey for natural sweetness. It’s soft, comforting, and just the right balance between healthy and indulgent.
Perfect warm from the oven with a little butter, almond butter, or yogurt — or packed into lunchboxes for an easy snack. It’s a lovely way to use up overripe bananas and fill your kitchen with that irresistible, cosy aroma. 🍌
Ingredients:
2 eggs
4 ripe bananas, mashed
½ cup melted coconut oil
1 cup flour (I use spelt or buckwheat)
2 tbsp honey
1 tsp bicarbonate of soda
1 tsp baking powder
1 tsp Himalayan salt
Method:
Preheat the oven to 180°C (fan).
In a large bowl, mash the bananas and whisk in the eggs and melted coconut oil.
Add the flour, honey, bicarb, baking powder, and salt. Stir until just combined.
Pour into a lined loaf tin and smooth the top.
Bake for around 45 minutes, until golden and a skewer comes out clean.
Allow to cool slightly before slicing — if you can wait that long!
Tip:Try adding chopped walnuts, dark chocolate chips, or a sprinkle of cinnamon for an extra touch of warmth and texture.
