Wholesome Banana Bread

This simple, feel-good banana bread is one of my absolute favourites — made with ripe bananas, nourishing spelt or buckwheat flour, and a hint of honey for natural sweetness. It’s soft, comforting, and just the right balance between healthy and indulgent.

Perfect warm from the oven with a little butter, almond butter, or yogurt — or packed into lunchboxes for an easy snack. It’s a lovely way to use up overripe bananas and fill your kitchen with that irresistible, cosy aroma. 🍌



Ingredients:

  • 2 eggs

  • 4 ripe bananas, mashed

  • ½ cup melted coconut oil

  • 1 cup flour (I use spelt or buckwheat)

  • 2 tbsp honey

  • 1 tsp bicarbonate of soda

  • 1 tsp baking powder

  • 1 tsp Himalayan salt


Method:

  1. Preheat the oven to 180°C (fan).

  2. In a large bowl, mash the bananas and whisk in the eggs and melted coconut oil.

  3. Add the flour, honey, bicarb, baking powder, and salt. Stir until just combined.

  4. Pour into a lined loaf tin and smooth the top.

  5. Bake for around 45 minutes, until golden and a skewer comes out clean.

  6. Allow to cool slightly before slicing — if you can wait that long!


Tip:Try adding chopped walnuts, dark chocolate chips, or a sprinkle of cinnamon for an extra touch of warmth and texture.
