Chocolate Rice Cake Bars

These chocolate rice cake bars are one of my go-to winter treats when I want something sweet, comforting and chocolatey, but still nourishing. They’re ridiculously easy to make, require just a handful of ingredients, and hit that perfect balance of crunchy, fudgy and indulgent. I keep a batch in the fridge or freezer and grab one when I need a little afternoon pick-me-up — they’re especially perfect on cold, rainy January days.

Ingredients
¼ cup cocoa powder
¼ cup maple syrup
½ cup peanut butter (drippy and smooth works best)
4 rice cakes, broken into small pieces
Toppings
Melted dark chocolate
Extra peanut butter (for swirling)
Method
Add the cocoa powder, maple syrup and peanut butter to a bowl and mix well until smooth.
Gently fold in the broken rice cake pieces, making sure everything is well coated.
Press the mixture firmly into a lined container or tin.
Pour melted chocolate over the top and swirl through a little peanut butter.
Freeze until fully set.
Slice into bars and store in an airtight container in the fridge or freezer.
✨ Tip: Keep them in the freezer for a firmer, fudgier texture — they’re so good straight from frozen!
