Stuffed Chocolate Dates

Simple. Sweet. Naturally Energising.

These homemade date bites are one of my go-to snacks when I want something grounding, energising, and genuinely satisfying. They’re made with just a few whole ingredients — but they deliver the perfect balance of sweetness, healthy fats, and feel-good energy.

Dates — rich in fibre and natural sugars for stable energy (no crashes!)

Almond butter — full of plant-based protein and healthy fats to keep you fuller for longer

Raw cacao — packed with antioxidants and magnesium to support mood and muscle recovery

Naturally sweet, no refined sugar, and no fuss — just a delicious, nourishing treat to enjoy with a matcha, post-Pilates, or as a mid-afternoon pick-me-up.

Ingredients:

  • 6 large Medjool dates (pitted)

  • 1 tbsp almond butter

  • 3 extra Medjool dates (for the filling)

  • Optional: pinch of sea salt

  • Raw dark chocolate, melted


Method:

  1. Pit the 6 large dates and set them aside.

  2. In a food processor, blend the almond butter with the 3 extra dates until a sticky, creamy paste forms.

  3. Stuff each of the 6 dates with the almond-date mixture.

  4. Melt the dark chocolate gently (using a bowl over hot water works best).

  5. Dip each stuffed date into the melted chocolate and place on a lined tray.

  6. Chill in the fridge for at least 30 minutes until set.

  7. That’s it — a little snack that feels like a treat but is truly good for you. Perfect to keep in the fridge for when you want something sweet, nourishing, and satisfying.
