My Go-To Summer Salad

Fresh, Colourful & Packed with Energy

This vibrant summer salad is one of my absolute favourites — quick to prep, full of colour, and packed with protein and fibre to keep you feeling nourished and energised all day long.

It’s the kind of lunch I love most in summer: simple, satisfying, and made with real, wholesome ingredients that truly support how I move and feel.


















Ingredients:

  • Quinoa

  • Tomatoes

  • Peppers

  • Lettuce & cucumber

  • Radishes & sprouts

  • Tofu & eggs

  • Avocado

  • A spoonful of kimchi (for that gut-loving zing!)

Dressing:

  • Tahini

  • Olive oil

  • Balsamic vinegar


Method:

  1. Cook the quinoa and let it cool slightly.

  2. Chop the vegetables and layer everything in a bowl.

  3. Add the tofu and eggs for a boost of protein.

  4. Spoon over the kimchi and drizzle generously with the tahini, olive oil, and balsamic dressing.

  5. Toss gently and enjoy immediately — ideally outside in the sunshine! ☀️

Tip:This salad is endlessly adaptable — swap tofu for chicken, add roasted sweet potato, or sprinkle over toasted seeds for extra crunch.
