My Go-To Summer Salad

Fresh, Colourful & Packed with Energy
This vibrant summer salad is one of my absolute favourites — quick to prep, full of colour, and packed with protein and fibre to keep you feeling nourished and energised all day long.
It’s the kind of lunch I love most in summer: simple, satisfying, and made with real, wholesome ingredients that truly support how I move and feel.
Ingredients:
Quinoa
Tomatoes
Peppers
Lettuce & cucumber
Radishes & sprouts
Tofu & eggs
Avocado
A spoonful of kimchi (for that gut-loving zing!)
Dressing:
Tahini
Olive oil
Balsamic vinegar
Method:
Cook the quinoa and let it cool slightly.
Chop the vegetables and layer everything in a bowl.
Add the tofu and eggs for a boost of protein.
Spoon over the kimchi and drizzle generously with the tahini, olive oil, and balsamic dressing.
Toss gently and enjoy immediately — ideally outside in the sunshine! ☀️
Tip:This salad is endlessly adaptable — swap tofu for chicken, add roasted sweet potato, or sprinkle over toasted seeds for extra crunch.
