This creamy Matcha Chia Pudding is one of my favourite quick and nourishing recipes — perfect as a healthy breakfast, afternoon snack, or light dessert. It’s subtly sweet, beautifully creamy, and gives that calm, sustained energy that matcha is known for.

Chia seeds add fibre, healthy fats, and plant-based protein, keeping you feeling full and balanced. The matcha brings gentle focus and a lovely earthy flavour that pairs perfectly with yogurt and berries on top. 🌱

Ingredients (serves 1–2):

  • 1 tsp organic ceremonial-grade matcha powder

  • 1 cup almond milk (or milk of choice)

  • 3 tbsp chia seeds

  • 1 tsp maple syrup or honey

  • Greek yogurt & berries, for topping

Method:

  1. In a small bowl, whisk the matcha with 1 tbsp of hot water until smooth.

  2. Add the almond milk and whisk again to combine.

  3. Stir in the chia seeds and maple syrup (or honey).

  4. Let sit for 5 minutes, then pour into a jar and give it a good shake to prevent clumps.

  5. Chill in the fridge for at least 2 hours, or overnight for a thicker texture.

  6. Serve topped with Greek yogurt, fresh berries, or a drizzle of nut butter.

Tip:For extra creaminess, use half almond milk and half coconut milk. It’s a beautiful way to start the day — or end it — feeling nourished and restored.
