High Protein Egg White & Avocado Frittata

This high protein egg white frittata is one of my go-to recipes when I want something quick, nourishing and packed with goodness. High in protein and full of colourful vegetables, it's the perfect breakfast, post-workout meal or light lunch that will keep you feeling satisfied and energised for hours. Made with egg whites, cottage cheese and a whole egg, it delivers an impressive protein boost while remaining light and easy to digest. The creamy avocado adds healthy fats, while spinach, tomatoes and peppers provide fibre, vitamins and flavour. I love making this on busy mornings when I need something simple, or preparing it in advance for easy grab-and-go lunches throughout the week. It's proof that healthy eating doesn't need to be complicated – just real, nourishing ingredients that help you feel your best.

Ingredients
200g egg whites
1 whole egg
Handful spinach
¼–½ avocado, sliced (add after baking)
2 tbsp cottage cheese
1 tbsp Greek yogurt (optional topping)
½ red pepper, diced
1 tomato, diced
Chilli flakes (optional)
Salt and pepper
Method
Preheat the oven to 180°C.
Whisk together the egg whites and whole egg.
Stir through the spinach, cottage cheese, peppers, tomatoes, salt and pepper.
Pour into a small ovenproof dish or lined baking tray.
Bake for 15–20 minutes until set and lightly golden.
Top with sliced avocado, a spoonful of Greek yogurt and chilli flakes if desired.
