Healthy Rice Crispy Slice

This wholesome twist on a classic favourite is the perfect mix of chewy, crunchy, and chocolatey — without any refined sugar. Made with gooey Medjool dates, creamy almond butter, and puffed rice for that irresistible crisp, it’s a snack that feels indulgent yet totally nourishing.
Perfect for lunchboxes, post-Pilates snacks, or an afternoon treat with a cup of tea. Keep a batch in the fridge for when you want something sweet, satisfying, and naturally energising.
Ingredients
• 200g Medjool dates (pitted, soft)
• 120g almond butter
• 30g coconut oil (melted)
• 90g puffed rice
• Pinch of sea salt
• 100g dark chocolate (melted, for topping)
Method
1. Blend the dates, almond butter and coconut oil into a smooth, sticky paste.
2. Mix with the puffed rice and a pinch of salt until evenly coated.
3. Press the mixture firmly into a lined baking tin.
4. Pour melted dark chocolate over the top and spread evenly.
5. Chill in the fridge until set, then slice into bars or squares.
Optional: sprinkle sea salt flakes or chopped nuts on top before the chocolate sets.
