Ingredients

• 1 block extra firm tofu, pressed and cubed

300g baby potatoes, chopped

1 tsp smoked paprika

1 tsp garlic powder

Salt and pepper

Spray oil

Large handful lettuce or spinach

Cucumber, sliced

Cherry or chopped tomatoes, halved

Red onion, finely sliced


Dressing:

3 tbsp Greek yogurt

Juice of ½ lemon

1 tsp Dijon mustard

Garlic powder or chopped chives

Salt and pepper


Method

  1. Toss the potatoes with smoked paprika, garlic powder, salt and pepper. Spray lightly with oil and air fry for 18–20 minutes until golden and crispy.

  2. Season the tofu with the remaining spices and air fry for 12–15 minutes until crisp on the outside.

  3. Prepare your salad bowl with lettuce, cucumber, tomatoes, red onion

  4. Add the crispy tofu and potatoes.

  5. Mix together all dressing ingredients and drizzle generously over the bowl before serving.
