Christmas Chickpea Brownies

There’s something a little magical about a Christmas treat that feels indulgent and nourishing at the same time. These Christmas Chickpea Brownies are exactly that—rich, fudgy, and full of festive flavours, yet made with wholesome ingredients that leave you feeling good. They’re naturally gluten-free, packed with plant protein, and sweetened with maple syrup and dark chocolate. Perfect for cosy December afternoons, lunchbox treats, or bringing along to a festive gathering. No one will guess they’re made with chickpeas… unless you proudly tell them.

Ingredients
1 can chickpeas, drained and rinsed
60ml maple syrup
100g almond butter
30g coconut sugar
4 tbsp raw cacao powder
1 tsp vanilla essence
1 tsp baking powder
75g dark chocolate (80%), chopped
Small sprinkle of flaky sea salt
Method
Preheat oven to 180°C / 160°C fan and line a tin with parchment paper.
Add all ingredients except the chocolate and salt to a food processor. Blend until completely smooth.
Stir in the chopped chocolate (reserve a small handful for the top if you like).
Spread the mixture into the prepared tin, smooth the top, and sprinkle over your reserved chocolate chunks.
Bake for 25–26 minutes. Once baked, add a pinch of flaky sea salt on top if desired.
Allow to cool fully before slicing. They’ll be deliciously gooey—wipe your knife between slices to keep them neat.
