Chilean-Style Chickpea & Squash Stew

A hearty, nourishing and deeply comforting one-pot stew that feels like the ultimate autumn hug. Rich with warming spices, tender squash and protein-packed chickpeas, this dish is simple to make yet full of slow-cooked flavour. It’s perfect for cosy evenings, batch cooking, or meal-prep lunches — and somehow tastes even better the next day.

This recipe is inspired by one of my favourites from Abel & Cole, whose beautifully curated recipe kits make cooking healthy, seasonal meals at home feel effortless.

Ingredients (serves 3–4)

  • 1 onion

  • 1 red onion squash

  • 2 garlic cloves

  • 2 tsp cumin seeds

  • 2 tsp smoked paprika

  • 1 tsp dried oregano

  • A pinch of cayenne pepper

  • 2 x 400g tins chopped tomatoes

  • 2 x 400g tins chickpeas, drained

  • A handful of flat-leaf parsley

  • 1 tbsp olive oil

  • Sea salt, to taste


Method

  1. Soften the onion - Trim, peel and roughly chop the onion. Warm the olive oil in a large pot over a medium heat. Add the onion with a pinch of salt and cook gently for 8–10 minutes, stirring occasionally, until soft and golden.

  2. Prepare the squash & herbs - Peel and chop the squash into bite-sized pieces. Finely slice the parsley stalks and roughly chop the leaves, keeping them separate for later.

  3. Build the flavour base - Stir the crushed garlic and parsley stalks into the softened onion. Add the cumin seeds, smoked paprika, oregano and a pinch of cayenne. Fry for around 1 minute until beautifully fragrant.

  4. Simmer the stew - Add the squash, chopped tomatoes and 300ml hot water. Stir well, cover with a lid and simmer for 15–20 minutes, until the squash is tender and the sauce has thickened.

  5. Add the chickpeas - Stir in the drained chickpeas and cook for a further 2–3 minutes until heated through.

  6. Finish & serve - Taste and adjust seasoning if needed, then scatter over the chopped parsley leaves to serve.
