Quick & Easy Pancake Recipe

These naturally sweet, protein-packed pancakes are one of my go-to breakfasts. Made with just a handful of wholesome ingredients, they're quick to whip up, deliciously fluffy and perfect for keeping you full all morning. They're also a big hit with my kids, making them a great breakfast or snack for the whole family. Top with Greek yogurt, berries, nuts and a little almond butter for an extra nourishing finish.
Ingredients

1 ripe banana
2 eggs
40g oats
1 tsp baking powder
½ tsp cinnamon
Splash of milk
Toppings
Greek Yogurt
Almond Butter
Nuts (I love chopped walnuts)
Fresh Berries
Method
Blend all the ingredients (except the toppings) until smooth.
Heat a non-stick frying pan over a medium heat.
Pour in the batter to make 2–4 pancakes (depending on size)
Cook for 2–3 minutes on each side until golden.
Top with Greek yogurt, fresh berries, almond butter, chopped walnuts and a drizzle of maple syrup if you fancy it.
