Green Goddess Protein Salad

A fresh, nourishing, protein-packed salad that’s quick to throw together and elevated with a creamy, herby green goddess dressing you’ll want to put on everything.

Salad Ingredients

• Lettuce leaves

• ½ cucumber, chopped

• ½ cup edamame beans

• 1 avocado, chopped

• 1 jar tuna (drained)

• Handful fresh herbs (parsley, coriander or basil)


Green Goddess Dressing

• Large handful fresh parsley

• Small handful coriander

• Small handful basil

• 1 -2 tbsp tahini

• 2 tbsp olive oil

• 1 tbsp Greek yogurt or cottage cheese

• 1 tsp Dijon mustard

• 1–2 tsp apple cider vinegar (to taste)

• Salt & pepper

• Splash of water (to loosen)


Blend everything in a Nutribullet until smooth and creamy.


To Serve

Toss the salad ingredients together, drizzle generously with the dressing, and enjoy. I love to sprinkle some seeds ontop for a little crunch!
