Crispy Tofu & Quinoa Protein Salad
A colourful, crunchy and seriously satisfying protein-packed salad with crispy tofu, golden quinoa, fresh veggies and creamy avocado, all tossed in the most delicious tahini, lime and ginger dressing. Perfect for meal prep, quick lunches and keeping you full and energised for hours.

Serves 3
* 450g firm tofu, grated
* 1½ cups cooked quinoa
* 2-3 cups spinach, chopped
* 100g edamame beans
* 1 cucumber, sliced
* ½ avocado, sliced
* ¼ red onion, sliced
* Spring onions, chopped
* Soft boiled eggs for extra protein
For the tofu:
* 1 tbsp olive oil
* ½ tbsp maple syrup
* ½ tbsp soy sauce
* 1 tsp garlic powder
For the dressing:
* 3 tbsp tahini
* Juice of 1 lime
* 1½ tbsp soy sauce
* 1½ tbsp maple syrup
* 1 garlic clove, crushed
* 1 tsp grated ginger
* add a dash of water if you prefer runnier
Method:
1. Heat oven to 200°C.
2. Spread cooked quinoa on a baking tray and bake for 20-25 mins until crispy.
3. Mix grated tofu with the tofu ingredients, spread on a second tray and bake for 25-30 mins until golden and crispy.
4. Whisk together all dressing ingredients.
5. Add kale, edamame, cucumber, avocado, onion, crispy quinoa and crispy tofu to a large bowl. I love to add soft boiled eggs for some extra protein!
6. Pour over the dressing, toss well and serve.
Top tip: Make a double batch and keep it in the fridge for easy high-protein lunches all week.
