Apple Crumble Overnight Oats 🍎

All the cosy flavours of apple crumble, turned into a delicious, nourishing breakfast. Creamy cinnamon overnight oats, warm soft apples and a crunchy almond and oat topping. Make it the night before and breakfast is ready to go.


Serves 1

For the overnight oats

  • 40g jumbo oats

  • 1 tbsp chia seeds

  • 100g Greek yoghurt

  • 100–120ml milk of choice

  • ½ tsp cinnamon

  • Optional: 1 tsp maple syrup or honey

For the cinnamon apples

  • 1 small apple, chopped into small pieces

  • ½ tsp cinnamon

  • Splash of water

  • Optional: ½ tsp maple syrup or honey

For the crumble topping

  • 1 tbsp jumbo oats

  • 1tbsp mixed seeds

  • 1 tbsp flaked or chopped almonds

  • ½ tsp maple syrup or honey

  • Pinch of cinnamon


Method

Mix the oats, chia seeds, Greek yoghurt, milk and cinnamon together in a jar or bowl. Cover and leave in the fridge overnight.m Add the chopped apple, cinnamon and a splash of water to a small pan. Cook gently for around 5 minutes until soft and lovely and caramelised. Add a little maple syrup or honey if you want it sweeter. For the crumble, add the oats, almonds, cinnamon and maple syrup to a dry frying pan and toast for a few minutes until golden and crunchy. In the morning, give your overnight oats a stir, then spoon over the warm cinnamon apples and finish with your crunchy crumble topping.

SO good with an extra spoonful of Greek yoghurt on top.
