Creamy Jalapeño Chicken Bowl

If you've followed me for a while, you'll know that I've really been focusing on increasing my protein intake

this year. One of the biggest mistakes I made in the past was thinking that eating less was the answer. I'd have tiny lunches, cut back on carbs and end up feeling hungry, tired and constantly thinking about food.
Now, I'm focusing on meals that are big, nourishing and packed with protein, fibre and goodness. Meals that actually keep me full, support my strength training and help me feel my best.
This Creamy Jalapeño Chicken Bowl is a perfect example. It's loaded with protein, full of flavour and topped with the most delicious creamy green dressing that honestly makes healthy eating feel effortless. It's easy to meal prep, great for lunch or dinner and one of those recipes you'll come back to again and again.
Serves 4
For the Bowl
800g squash, peeled and chopped
640g chicken breast
2 tsp garlic powder
2 tsp onion powder
1 tsp cumin
Sea salt and black pepper
4 large handfuls of lettuce
120g sweetcorn, drained
For the Creamy Green Dressing
170g Greek yoghurt
75g cottage cheese
1 jalapeño (remove seeds if you prefer less heat)
Juice of 1 lime
Large handful fresh coriander
2tbsp Olive Oil
Sea salt and black pepper
Method
Preheat the oven to 200°C (180°C fan).
Place the squash on a baking tray, season with a little salt and pepper and roast for 30–35 minutes until soft and golden.
Meanwhile, season the chicken with the garlic powder, onion powder, cumin, salt and pepper.
Heat a frying pan over a medium heat and cook the chicken for 6–8 minutes on each side, or until cooked through and golden. Allow to rest for a few minutes before slicing.
To make the dressing, add the Greek yoghurt, cottage cheese, jalapeño, lime juice, olive oil , coriander, salt and pepper to a blender and blend until completely smooth and creamy.
Divide the lettuce between four bowls and top with the roasted squash, sweetcorn and sliced chicken.
Drizzle generously with the creamy jalapeño dressing and enjoy.
